Why It’s Skin-Loving
Spinach is full of vitamin A and iron, chickpeas provide zinc (essential for skin repair), and tomatoes and radishes add vitamin C to boost collagen production. The healthy fats from olive oil help retain moisture in the skin barrier.
Ingredients
For the spinach falafels:
2 cups fresh spinach, chopped
1 cup cooked chickpeas
2 cloves garlic, minced (optional)
¼ cup rolled oats
1 tbsp lemon juice
1 tbsp olive oil
Salt and pepper to taste
For the bowl:
1 cup cooked chickpeas
1 tomato, sliced
1 radish, thinly sliced
½ carrot, julienned
A few lettuce leaves
1 tsp olive oil + lemon juice dressing
Directions
Make the falafels: Preheat oven to 375 °F (190 °C). Blend all falafel ingredients in a food processor until combined. Roll into small balls and bake for 20 minutes, flipping halfway through.
Assemble: Place lettuce in a bowl, then add falafels, chickpeas, tomato, radish, and carrot.
Dress: Drizzle with olive oil and lemon juice before serving.
